Rellenong Bangus (Stuffed Milkfish)

I've been craving for this for weeks ever since I thought of preparing this for the Noche Buena. We all have different food assigned for us to prepare and I chose of this one. I already miss this dish that my mom usually cooks on special occasions.

Servings: 6-8

Ingredients:
1 big bangus (milkfish)
3 cloves of garlic, minced
1 onion chopped
2 tomatoes, diced
1 egg
1/4 cup lemon juice
1 small carrot, finely chopped
1/4 cup soy sauce
4 tablespoons of cooking oil
ham, finely chopped
raisins
cooked peas
salt and pepper to taste

Procedure:
1. Scale and remove the intestines of the bangus.
2. With a very sharp knife, slowly remove the meat of the fish from the skin through the opening cavity below the head. Remove the spine by snapping off the bone at the base of the tail and head. Use a long spoon to scrape all the meat from the skin.
3. Marinate the head and skin in lemon juice, soy sauce and pepper.
4. Boil in 1/2 cup of water the bangus meat with some salt for 5 minutes.
5. Sauté the garlic and onions until slightly brown then add the tomatoes and carrots until tender.
6. Add the chopped ham, cooked peas, raisins and the bangus meat to the mixture. Cook for an additional 5 minutes. Salt and pepper to taste.
7. Add a beaten egg to the sauté and mix well.
8. Stuff the mixture inside the bangus skin and head. Sew the cavity if needed.
9. Fry in oil until golden brown.
10. Slice slightly diagonal (1 1/2 inch thick) and serve.

Chicken Cordon Bleu


Not in the mood for cooking but can't think of anything to do with chicken breast so I ended up with this recipe.

Ingredients:
1/2 kg boneless skinless chicken breasts, thinly sliced
1/4 kg sweet ham, sliced into halves
1 kraft cheddar cheese, sliced into cubed strips
1/4 tsp pepper
1/2 cup knorr original liquid seasoning
4 eggs, beaten
1 cup flour
2 cups bread crumbs

Procedure:
1. Marinade the chicken breasts with knorr seasoning and pepper. Let stand for 10 minutes.
2. On a flat surface, lay chicken breast flat and put a slice of ham then cheese on top. Roll it tightly to close and roll on the flour.
3. Dip the rolled chicken in the egg mixture then roll in bread crumbs.
4. Deep fry until golden brown.
5. Serve it sliced.
6. Tip: You may opt to bake it instead of frying.

Creamy Chicken and Mushroom


I just thought of this dish thinking what to do with chicken and mushroom. It turned out great!

Ingredients:
1 whole chicken cutlets
2 large potatoes, cubed
1 large carrots, cubed
1 can sliced mushrooms
1 large can evaporated milk
1 clove garlic, minced
1 large onion, sliced
salt
pepper

Procedure:
1. Saute garlic and onions in oil until brown. Add the chicken and pour a dash of salt and pepper.
2. Let it simmer for 20-25 minutes or until chicken is tender. Add small amounts of water if the chicken gets dried up.
3. Add potatoes and carrots and pour in the milk after 5 minutes.
4. Let it boil until the vegetables are tender then add in the mushrooms and let stand for 5 minutes.
5. Serving suggestion: Serve alongside mixed vegetables and mashed potatoes.

Bistek Tagalog


This was the dinner I prepared last night. Fast and easy, goes well with hot steamed rice.

Ingredients:
1/2 kilo sirloin beef, very thinly sliced
1/4 cup soy sauce
4 pcs. lemon, juiced
1/2 teaspoon black pepper, ground
1/4 teaspoon salt
3 cloves garlic, minced
2 large onions, cut into rings, separate the small parts
2 tablespoon cooking oil

PROCEDURE :
1. In a large bowl, mix the beef, soy sauce, lemon juice, black pepper and salt.
2. Place the marinated beef in a frying pan and let it simmer for 30 minutes or until beef is tender. Remove from heat and set aside.
3. In another frying pan, heat the oil and stir fry the large onion rings until soft and remove from the pan. Saute garlic and the small onions until brown.
3. Add the beef and let it boil for another 5 minutes.
4. Pour the cooked beef in a bowl and top with the onion rings.
5. Serve hot with rice.

Chocolate Cheesecake Squares


For my very first recipe, I thought of sharing this one as I just have eaten this a few minutes ago. Given to me by the wife of my colleague, I find this chocolate cheesecake squares a very delicious dessert ans snack which is very easy to prepare.

Ingredients:
Crust:
3/4 cup butter
3 cups graham cracker crumbs
1 cup MILO
Filling:
1 cup cream cheese
1 300ml can condensed milk
1 pc egg
1 tsp vanilla extract
1 tsp lemon rind(or flavoring)

Procedure:
1. Mix graham cracker crumbs and Milo. Melt butter and pour into the mixture and mix well.
2. Leave about 1/2 cup of the prepared mixture for the topping. Press remaining mixture evenly onto a 13x9x2 inch baking pan. Set aside.
3. Beat cream cheese until light. Slowly stir in condensed milk, egg and vanilla or lemon rind. Pour over prepared crust.
4. Bake at 375 degrees for about 5-10 minutes or until settled. Remove from oven and sprinkle with the reserved crumb mixture. Bake again for another 5 minutes.
5. Cool and refrigerate and cut into desired size.

Getting Started

I finally found the time to publish my kitchen! (As if!) I may not be the best chef but I'd like to share my cooking and baking experiences. This may probably help a lot of beginners in the kitchen especially basics in baking.
As I really love food and preparing them, I just thought it right to share some of my knowledge and things I read and stuff I discovered in relation to cooking and baking.
